Chicken Cordon Bleu

Contrary to popular belief, Chicken Cordon Bleu isn't French. It likely originated in Switzerland around the 1940s. The first documented recipe appeared in a Swiss cookbook in 1949. It is based on schnitzel, a thin, breaded cutlet, filled with cheese in this case. Most recipes roll the ham and cheese in the chicken. This recipe puts the ham, cheese and bread crumbs on top and it gets baked in the oven, which makes it way easier. It’s served with this Parmesan-Dijon Cream Sauce sauce, which makes this dish outstanding.

Hot Pickle and Cheese Cracker Dip

As a kid, growing up in Indiana in the 60s, one of my favorite snacks was/is Cheez-Its Crackers and Kraft Pimento Cheese Spread. We are taking "haute cuisine". My tastes have evolved into a somewhat more sophisticated palate, though if you showed up at my house with this combo, I would be delighted! Anyway, getting back to my main point here is this Hot Pickle and Cheese Cracker Dip. It's a deliciously spicy, tangy, cheesy, briny dip that is covered in, wait for it... Cheez-Its and baked. What's not to like?!

Lighthouse Inn Potatoes

Lighthouse Inn Potatoes originated at an iconic hotel and restaurant located in New London, Connecticut, which closed in 2008. Executive Chef Leon “Wally” Walden, who worked there for nearly 50 years, created Lighthouse Inn Potatoes. It is similar to scalloped potatoes, but instead of sliced potatoes he used chunks of potatoes that are cooked in light cream and butter and a bit of baking soda, which neutralizes the potatoes’ tannins and create a velvety sauce. The potatoes are topped with buttery parmesan panko breadcrumbs and baked until the bubbling and golden brown.

Hot Reuben Dip

My nephew Will was visiting from the UK. He loves reuben sandwiches, so I made him this Hot Reuben Dip. It's a combination of corned beef (I couldn't find any so I used pastrami), cream cheese, Swiss cheese, sauerkraut, sour cream, ketchup, and spicy brown mustard. It's baked in the oven and served with rye or pumpernickel. It was delicious.

Million Dollar Chicken

Million Dollar Chicken is a dish inspired by Neiman Marcus Dip, a recipe created by chef Helen Corbit in the 1950s. She worked at the Zodiac Room, a restaurant in the Neiman Marcus department store in Dallas, Texas. The recipe was never officially released, but it is believed to have been a combination of cream cheese, mayonnaise, sharp cheddar cheese, bacon, green onions, and almonds. The name "Million Dollar Dip" is said to have come from the fact that the dip was so good, it tasted like it cost a million dollars.
