Directions
1Preheat the oven to 425° F.
2On a parchment-lined baking sheet, place 4 equal portions of butter on the baking sheet. Sprinkle 1 tablespoon of parmesan in the shape of the potato on top of the pat of butter. Then place the yam, cut side down, on top of the butter and parmesan.
3Pierce each potato several times with a fork. Brush potatoes with olive oil and sprinkle with salt and pepper.
4Bake for 35 - 40 minutes, until tender.
