Bacon Ranch Party Potato Casserole

This Bacon Ranch Party Potato Casserole is truly a crowd pleaser. It takes the classic Midwestern cheesy hashbrown funeral potatoes and gives them a punchy, modern upgrade by swapping out the traditional cream of chicken soup for tangy sour cream and zesty ranch seasoning, all topped with smoky bacon.

Ingredients

32 ounces frozen hash browns diced

16 ounces sour cream, 2 cups

8 bacon slices

1 packet dry ranch dressing mix

2 cups shredded cheddar cheese, divided

Directions

1Preheat an oven to 350⁰F.

2Prepare a 9 X 13 baking dish by coating it with baking spray.


3Cook the bacon in a skillet until brown and crispy. Remove from the pan and place on paper towels to drain.


4Once the bacon is cool, chop it into small pieces and set aside.


5In a large bowl, combine the hash browns, sour cream, bacon piece, ranch dressing mix, and 1 cup of cheddar cheese.


6Cover the baking dish with foil and place it into a preheated oven and cook for 45 minutes.


7Remove the foil from the pan, cover with the remaining 1 cup of cheddar cheese and continue baking for 15 minutes or until the cheese on the top has completed melted and started to bubble.


8Remove from the oven and serve.
