This Bacon Ranch Party Potato Casserole is truly a crowd pleaser. It takes the classic Midwestern cheesy hashbrown funeral potatoes and gives them a punchy, modern upgrade by swapping out the traditional cream of chicken soup for tangy sour cream and zesty ranch seasoning, all topped with smoky bacon.

Directions
Preheat an oven to 350⁰F.
Prepare a 9 X 13 baking dish by coating it with baking spray.
Cook the bacon in a skillet until brown and crispy. Remove from the pan and place on paper towels to drain.
Once the bacon is cool, chop it into small pieces and set aside.
In a large bowl, combine the hash browns, sour cream, bacon piece, ranch dressing mix, and 1 cup of cheddar cheese.
Cover the baking dish with foil and place it into a preheated oven and cook for 45 minutes.
Remove the foil from the pan, cover with the remaining 1 cup of cheddar cheese and continue baking for 15 minutes or until the cheese on the top has completed melted and started to bubble.
Remove from the oven and serve.
