Egg Boats

I often have random leftover ingredients from various catering events. These Egg Boats are a product of that. I used goat cheese, but you can use your favorite cheese.

  • Yields: 2 Servings

Ingredients

2 demi baguettes, hollowed out

4 eggs

⅓ cup cheese or your choice, I used goat cheese

4 cherry tomatoes, diced

1 green onion, thinly sliced


salt and pepper, to taste

parmesan cheese, grated, to taste

Directions

1Preheat the oven to 350° F.

2In a bowl, whisk the eggs, cheese, tomatoes, green onion, salt, and pepper together.

3Pour the egg mixture into the baguettes and top with some parmesan cheese.

4Bake for about 25 - 30 minutes or until desired doneness.

Tip
How to bring a stale baguette back to life -

Run your stale baguette under running water. Then wrap it in aluminum foil. Place your wrapped bread in a cold oven and turn it on to 300°F. For a full baguette, heat it for the full 12 minutes. For a half or partial loaf, heat it for 10 minutes. Unwrap it and put it back in the oven and heat for an additional 4-5 minutes, uncovered. This is will make the baguette nice and crusty again.
