Chicken Cordon Bleu Casserole

A cordon bleu is a dish of meat, usually chicken that is wrapped around cheese (or with cheese filling), then breaded and deep-fried. This Chicken Cordon Bleu Casserole is an easier version, that has bite-size pieces of chicken, ham, in a cheesy cream sauce and top with buttery panko breadcrumbs. You can make all in a pressure cooker / Instant Pot or on the stovetop. I have included both methods.

Ingredients

1 pound short pasta, like rotini

3 cups chicken broth

1 pound boneless skinless chicken breast, cut into cubes

1 pound ham, cubed

8 ounces Swiss cheese, grated

8 ounces Gouda cheese, grated

1 cup heavy cream

1 tablespoon Dijon mustard

2 tablespoons butter

1 cup panko breadcrumbs

Directions

Instant Pot Instructions

1Pour uncooked pasta into your instant pot cover with the chicken broth.

2Place the chicken and ham on top.

3Place on Manual High Pressure for 10 minutes. Or use the poultry button.


4Do a quick release. Stir and pour heavy cream, mustard and both of the cheeses into the pan.

5Stir until creamy and smooth.

6In a small pan melt butter and add panko breadcrumbs stir until golden brown about 2-3 minutes.


7Sprinkle on top of the Cordon Bleu.

Stovetop Instructions

1Heat a dutch oven or large heavy bottomed pot over MED heat and add butter and oil.  Add diced chicken and cook for 3 - 4 minutes, until golden brown.  Chicken may not be cooked all the way through.  Remove chicken to a plate.


2Add the ham to the pot and cook about 3 minutes. Return chicken to pot, then add chicken stock and stir.  Turn heat up to HIGH and bring to a boil.  Once boiling, add pasta, reduce heat to LOW, cover, and simmer 10 - 15 minutes, stirring frequently, until most of the liquid is absorbed and pasta is cooked.


3Stir in heavy cream, Dijon mustard and all but one cup of the shredded cheeses. Sprinkle the top of the dish with remaining cheese, panko breadcrumbs, dot with butter and broil on HIGH for 1 - 2 minutes, or until cheese is melted and bubbly.
