Chicken Bacon Ranch Casserole with Broccoli

This Chicken Bacon Ranch Casserole with Broccoli is a family-friendly meal. I have to say, it's my new favorite casserole. The combination of chicken, bacon, pasta ranch dressing and cheese is delicious.

Ingredients

2½ cups short pasta

2 pounds chicken breast, cooked, cubed


8 slices bacon, cooked, chopped


2 cloves garlic, minced


¾ cup ranch dressing 


1 cup mozzarella cheese, shredded, divided 


1 cup cheddar cheese, shredded, divided

4 cup broccoli, cut into florets

Directions

1Preheat the oven to 375° F.


2Cook pasta for about 8 minutes. Drain.

3Blanche broccoli into a pot of boiling water for 1-2 minutes until bright green.

4Combine the pasta, chicken, bacon, drained spinach or broccoli, garlic, ranch dressing, and half of the shredded cheeses in a large bowl. Stir until well incorporated. Transfer to a 9x13 in glass or stoneware casserole dish.

5Top with remaining shredded mozzarella and cheddar cheeses.

6Bake for about 15 minutes, until hot and bubbly. If baking later, bring to room temperature and bake for 30 minutes at 375° F.
