Burrito Pie

Here's another socially distant dinner I made in my Instant Pot on my Dad's porch. You can also make this layered  Burrito Pie in the oven. It's everything in a burrito - meat, refried beans and cheese that are stacked up with tomatoes and baked.

  • Yields: 6 Servings

Ingredients

1 pound ground beef

16 ounce can refried beans

10 ounce can diced tomatoes with chilis, drained

4 ounce can diced green chilis, drained

2 cups Mexican cheese, shredded, divided

3 tablespoons taco seasoning

1⅓ cup water, divided

5 - 6 flour tortillas

Optional toppings

avocado/guacamole

salsa

Directions

1Sauté the ground beef then drain off the fat and add the taco seasoning along with ⅓ cup of water and just a few spoonfuls of the diced tomatoes.


Instant Pot

1Remove the meat from the inner pot.


2Clean inner pot and set back in your Pressure cooker.


3Spray your 6 or 7-inch springform or removable bottom pan with cooking spray lightly. Wrap the bottom of the pan tightly with foil so it doesn’t leak into the pot.


4Layer one flour tortilla on the bottom.


5Next take your refried beans and lightly layer on top of the flour tortilla.


6Add a layer of ground beef, add a layer of diced tomatoes, green chilis sprinkle cheese on top. Repeat the same process until you get to the top of your pan. I was able to do 5 layers.

7Add a cup of water to the pot.


8On the last layer put a tortilla on top. Cover the pan with foil and place on the trivet/rack, and use the handles to place them in the pot.


9Close lid and press the Pressure Cook/Manual button (or dial) and use the + or - button (or dial) to choose 17 minutes, and High pressure.

10When the cooking cycle has ended, let the pot sit undisturbed for 10 minutes (10 minute Natural Release). Then turn the steam release knob to the Venting position to release the remainder of the steam/pressure.

11Turn on your broiler to 450° F. Remove the foil from the pan and sprinkle on the remaining some cheese.


12Place the pan on the middle oven rack and let the cheese brown to the desired amount.

13Remove pan from pot and let cool on plate for at least 10 minutes.


Oven

1Preheat the oven to 350° F. Bake in the oven for 30 minutes, then broil the cheese on top until melted.

2Slice and serve adding shredded lettuce, more tomatoes, salsa and some guacamole.
