Vaquero Bean Soup
I love using a leftover ham hock to make soup. I also happen to have some Rancho Gordo Vaquero beans. If you don't know about Rancho Gordo, then you need to check them out. You can substitute other beans for this soup, like black beans. I have given you the recipe for 3 cooking methods - Instant Pot (which is what I did), Slow Cooker or stovetop. Before serving, I love adding a splash of sherry vinegar, which brightens it up and add a burst of flavor.

Welsh Rarebit
My husband, Eric, made lunch. Instead of making grilled cheese, he made Welsh Rarebit. A dish from Wales made with old cheese melted on toasted bread. Often called Welsh rabbit because it is thought the people of Wales were too poor to eat meat. The following recipe is from the legendary late Cock n' Bull restaurant on Sunset Boulevard in Hollywood. I miss going there! By the way, The Cock n' Bull invented the Moscow Mule Cocktail. Another great place to have Welsh Rarebit is at Fortnum & Mason in London, though Eric’s is just perfect!

Butternut Squash Soup with Cannellini Beans, Ham and Swiss Chard
I made this Butternut Squash Soup with Cannellini Beans, Ham and Swiss Chard with leftover ingredients I had In my fridge. Here are two ways to make it - on the stovetop or in the Instant Pot. You could also purée a few cups of it to make it a creamy soup. Serve it with some good crusty bread and a salad. I love butternut squash, which has more potassium than a banana. Its benefits are too many to mention!

Japanese Potato Salad
Japanese Potato Salad is unique in that it is half mashed and half chunky, which gives it a creamier texture. It has grated carrots, cucumbers, scallions and diced ham. To emulate Kewpie mayonnaise, you add a little bit of sugar. The Yukon Gold potatoes I used where particularly gold in color!

I don't really like leftovers. It's because I do not want to eat the same thing again, so I love to reimagine leftovers in a different way. These Ham Croquettes (or any other leftover meat and mashed potatoes) is a perfect example. By the way, I just ate these and they are to die for! These crispy Ham Croquettes are little logs of seasoned minced ham and mashed potatoes. They would also be good as an appetizer with a cold glass of rosé wine. What's not to love!?

Omelet Potatoes
My Aunt Elba posted this recipe video for Omelet Potatoes. It looked so good that I made them for dinner. It's basically a twice cooked potato with omelet filling. This recipe is very versatile. You could make it vegetarian by using mushrooms instead of the ham. I also used Gruyère instead of mozzarella.

Chicken Cordon Bleu Casserole
A cordon bleu is a dish of meat, usually chicken that is wrapped around cheese (or with cheese filling), then breaded and deep-fried. This Chicken Cordon Bleu Casserole is an easier version, that has bite-size pieces of chicken, ham, in a cheesy cream sauce and top with buttery panko breadcrumbs. You can make all in a pressure cooker / Instant Pot or on the stovetop. I have included both methods.
