Omelet Potatoes

My Aunt Elba posted this recipe video for Omelet Potatoes. It looked so good that I made them for dinner. It's basically a twice cooked potato with omelet filling. This recipe is very versatile. You could make it vegetarian by using mushrooms instead of the ham. I also used Gruyère instead of mozzarella.

  • Yields: 4 Servings

Ingredients

4 potatoes

olive oil

salt and pepper, to taste

4 eggs

½ cup ham, diced

¼ cup scallions, minced

1 tablespoon parsley, chopped

½ cup mozzarella, grated

Directions

1Preheat oven to 375° F.

2Oil the outside of the potatoes, then add salt and pepper.

3Bake 1 hour and 30 minutes, depending on the size of the potatoes.

4Cut the tops off and hollow out each potato.

5Roughly mash potatoes.

6Mix the potatoes with the eggs, ham, scallions, and parsley.

7Whisk to combine and then pour it evenly into each potato.

8Top evenly with mozzarella.

9Bake an additional 15 minutes.
