Instant Pot Lasagna

I made this Instant Pot Lasagna using my 7” Fat Daddio's Round Removal Bottom Cheesecake Pan. I have to say, it was the best lasagna I have ever made. I have also included the oven instructions if you do not have an Instant Pot / Pressure Cooker. I love the way it looks and it's so much easier to serve sliced into pie-shaped wedges.

Chicken Tetrazzini

Last night, my husband said we should make Chicken à la King. I happen to have a lot of chicken at the moment. I then proceed to tell him how to make Chicken Tetrazzini. I get them both mixed up!

It turns out the difference is that Chicken Tetrazzini has cheese in it and Chicken à la King does not. In the 1950s, you would open a can of Campbell's cream of mushroom soup, a package of frozen peas, carrots, a can of sliced mushrooms, some Velveeta cheese, and chicken or turkey and voila...an abomination! Anyway, my version is delicious!

Smashed Sweet Potatoes

Ina Garten's Smashed Sweet Potatoes is my new favorite sweet potato recipe. I grew up having canned yams with a pound of brown sugar and butter... Yes, there were a tad sweet! The potatoes are roasted and then smashed with orange juice and a little cream. My daughter wanted to top it with bacon, pecans, and some fresh sage, but this is optional.

In England, it's often served on Mondays refashioning Sunday lunch into an easy weeknight meal.  It's the ultimate comfort food. I make this often for kids at school using tater tots instead of mashed potatoes.

Coquilles Saint Jacques

Our friend Jeanne invited us to dinner last week and she made Ina's Coquilles Saint Jacques. I have never been a fan of scallops, but that all changed! This was spectacularly good. Scallops in a creamy sauce with just a hit of curry are cooked under a crust of bread crumbs and cheese. The beauty of this recipe is that it can be prepared the day before. Coquille is the French word for shell.
