Spinach Quiche (Gluten-Free)

This Crustless Spinach Quiche is naturally gluten-free! It's an elegant yet easy dish, ideal for brunch, a light lunch, or even a simple dinner, offering all the flavor without the fuss of a crust. This recipe proves that going gluten-free doesn't mean compromising on deliciousness. It's also lower in carbohydrates, making it a versatile and healthy option.

Ingredients

spray oil

16 Eggs

20 ounces frozen chopped spinach, thawed & squeezed of liquid

1 tablespoon olive oil

1 onion, chopped

4 cups mozzarella or cheddar cheese, (hand grated to make sure it’s gluten-free)

salt & pepper, to taste

Directions

1Preheat oven to 350° F. Spray a 9” x 13” casserole dish.


2Heat oil in a large skillet over medium heat. Sauté the onion until translucent, then stir in spinach.

3In a large bowl, combine eggs, cheese, salt and pepper. Add spinach and onion mixture and combine well.


4Pour into the casserole dish and bake for about 30 minutes or until eggs are set.
