This Salmon Glazed with Orange, Rosemary & White Wine is pan-fried until crispy and topped with this citrusy rosemary sauce. It's ready from start to finish in less than 20 minutes, which makes it perfect for a busy work night dinner.

Ingredients
2 teaspoons olive oil
4 (6 ounce) salmon fillets
Salt and freshly ground black pepper
1 shallot, minced
2 cloves garlic, minced
3 teaspoons fresh rosemary, minced
⅓ cup white wine, divided
1½ teaspoons orange zest
⅔ cup fresh orange juice
1½ tablespoons honey
2½ teaspoons cornstarch
pistachios, chopped, for garnish (optional)
Directions
1Heat the olive oil in a large non-stick sauté pan or skillet over medium-high heat.
2Season both sides of the salmon with salt and pepper.
3Add the salmon to the pan and cook until browned on both sides and cooked through, about 3 - 4 minutes per side. Transfer salmon to a plate.
4Add the shallots, garlic, and rosemary to the pan and sauté 2 for about a minute, then add the white wine and cook until it’s mostly reduced.
5Stir in the orange zest, orange juice, and honey. In a small bowl whisk together 1 tablespoon of water with the cornstarch. Pour into pan, season sauce with salt and pepper to taste then bring to a boil and cook until the sauce thickens.
6Return salmon to pan, spoon sauce over salmon and top with pistachios.
