Ritz Zucchini Cheddar Casserole

Since I am originally from Indiana, I can't resist a cheesy casserole. This Cheesy Zucchini Cheddar Casserole is the ultimate comforting side! It's packed with zucchini and onions in a rich, creamy, and, you guessed it, cheesy sauce, all topped with buttery, crunchy crackers. It's a simple, warm, and delicious dish that's perfect for family dinners or potlucks.

Directions
1Preheat the oven to 400° F. In a large frying pan, sauté zucchini and onion in butter until soft and transparent. Add salt and pepper. Set aside.
2In a large bowl, mix crushed crackers and cheddar cheese. Place ½ of the cracker/cheddar mixture into the sautéed zucchini and onions. Reserve the other ½ as the topping.
3In a separate medium bowl, whisk the eggs and milk. Pour this into the zucchini mixture and mix.
4Place the zucchini mixture into a 2-quart baking dish. Top with the remaining cracker/cheddar mixture.
5Bake for 20-25 minutes or until golden brown on top.
