Ingredients
1 pound shrimp, peeled and deveined
2 tablespoons pepperoncini oil (recipe below)
Kosher salt and freshly ground black pepper
2 tablespoons Pepperoncini juice, from the jar
¼ cup parsley, chopped
Pepperoncini Oil
(You want to make this first so that you give it time to cool before marinating the shrimp in it)
⅓ cup olive oil
½ cup pepperoncini, finely diced
3 garlic cloves, sliced
Kosher salt and freshly ground black pepper
Directions
1Season the shrimp with salt and pepper and then add in 2 tablespoons of the pepperoncini oil and let marinate for 10 minutes.
2Heat a skillet over medium-high heat and then sauté the shrimp until they are pink and curled, about 2 minutes on each side. Remove from the heat, add to a bowl, and pour the additional pepperoncini oil over the shrimp. Add a couple tablespoons of pepperoncini juice and the chopped parsley and stir.

1In a medium saucepan, heat the oil over medium heat. Add the pepperoncini and garlic, and sauté until aromatic, about 2 minutes. Remove from the heat, season with salt and pepper, and let cool.
