Parmesan Cheese Biscuits

When my husband and I lived in London, our eccentric friend Sandra introduced us to these Parmesan Cheese Biscuits. They are very easy to make and unusual. I use mini cookie cutters and cut them into shapes – usually pigs or Scottie dogs. Unfortunately, couldn't find fun shapes for this batch. These would go well with any cocktail.

Ingredients

4 ounces flour

2 ounces butter

2 ounces Parmesan cheese, grated

yolk of one egg

salt

¼ teaspoon cayenne pepper

Directions

1Rub the butter into the flour, add the egg yolk, salt, cayenne pepper, and cheese. Moisten with water if necessary.

2Roll out the dough to a half inch thickness. Cut into 1-inch shapes. Arrange on a baking sheet and bake at 325° F for 20 minutes. Serve warm.

Note - It is the thickness of the biscuits, which gives them their character. They can be stored in a tin and then heated up before serving.
