I made Lamb Chops with Mint Sauce for my husband's birthday last week. This is the definition of a labor of love. I happen to detest lamb! Having lived in the UK for years, I had to endure many Sunday lunches, flipping the lamb onto my husband's plate when the host left the room! I suppose they wondered why he had all the bones! Anyway, I was told it was a real treat.

Ingredients
Lamb Chops
2 pounds lamb loin chops
Salt and pepper
Mint Sauce
2¼ cups mint leaves, finely chopped
1 tablespoon sugar
½ teaspoon kosher salt
1 cup white vinegar
Directions
Mint Sauce
1Combine mint, sugar, salt, and ¼ cup boiling water, and stir until sugar dissolves. Add vinegar, and cover; let sit for 1 hour to meld the flavors.
Lamb Chops
1Heat a grill or grill pan to medium-high heat. Sprinkle both sides of the lamb with some salt and pepper. Place on the grill and cook to the desired temperature. (Medium-rare/medium took about 2 to 3 minutes per side on my stovetop grill pan.) Transfer to a cutting board or other serving platter.
To Serve
1Spoon some of the Mint Sauce over the lamb and serve with the remaining sauce on the side.
