My father has been going through some major health issues and needs to eat more. We were out at a restaurant and he ordered Lamb Chili, which he absolutely loved. I decided to make him a big pot of it and have included two methods - stovetop and Instant Pot. This was definitely a labor of love given that I really hate lamb!

Anyone that knows me well, knows that I despise lamb. When we lived in England I had to endure many a Sunday lunch thinking of ways to hoist it over onto my husband's plate without the hostess noticing. I was only sometimes successful... Last week I bought him these lamb chops, gave him the recipe and sat in the living room with a vodka soda while he made them. This just shows how much I love him. So, these Lemon-Garlic Marinated Lamb Chops are Greek-inspired and I was told they were rather good.

I made my husband Lamb Chops with Crispy Shallots and Pomegranate Sauce. We were celebrating. I have only made him lamb on one other occasion, which was his birthday. He loves lamb and always orders it when we go out for dinner because he knows I REALLY don't like lamb! Needless to say, he loved it. The Pomegranate sauce is absolutely delicious. I made myself a piece of beef.
