I had some ground beef I needed to use and made these Korean Ground Beef Rice Bowls. I wasn't sure if I was going to like it, but it was seriously good. I happened to have all the ingredients and also made Bibimbap Sauce to drizzle over the top. You could add some cooked broccoli, snap peas, carrots, etc. It's quick to make. This recipe is the cheater version because it uses ground beef, unlike the more traditional Bulgogi.
Yields: 4 Servings
Ingredients
1 pound ground beef
Ground Beef Sauce
¼ cup soy sauce
2 tablespoons brown sugar
1½ tablespoons rice wine
½ tablespoon garlic, minced
1 teaspoon ginger, minced
ground black pepper , to taste
½ tablespoon toasted sesame oil
Bibimbap Sauce
2 tablespoons gochujang (Korean chili paste)
1 tablespoon toasted sesame oil
1 tablespoon sugar
1 tablespoon water
1 tablespoon toasted sesame seeds
1 teaspoon rice vinegar
teaspoon garlic, minced
To serve
2 cups hot cooked white or brown rice
green onion, sliced
Directions
1In a large skillet cook the ground beef over medium heat until no longer pink.
Ground Beef Sauce
1In a small bowl whisk the soy sauce, brown sugar, rice wine garlic, ginger, black pepper, and sesame oil. Pour over the ground beef and let simmer for another minute or two.
2Serve over hot rice and garnish with green onions and drizzle over the Bibimbap Sauce.
