Hippie Waffles

I was listening to an NPR program called Good Food a few weeks ago and heard this story about these guys, Gideon Brower and his friend Jack, who is an “old-school hippie” that he calls Hippie Jack. They decided to devote an entire day to canvas the city in search of LA’s best waffle. The rule was that every waffle would be stacked up against something called the “Green-Sherman” waffle. The Green-Sherman is a creation of Jack’s friends in Seattle, and he calls it a legendary “hippie waffle.”

  • Yields: Makes 8 waffles

Ingredients

1 cup flour

1 tablespoon sugar

1½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon cinnamon

¼ teaspoon salt

2 eggs, separated

¾ cup milk

1 banana, mashed

½ cup yogurt

¼ cup butter, melted

¾ cup toasted pecans

1 tablespoon poppy seeds

Directions

1In one bowl, stir together flour, sugar, baking powder, baking soda, cinnamon, and salt.

2Combine remaining ingredients separately. In a different bowl, combine egg yolks, milk, banana, yogurt, and butter. Mix until blended.

3Combine all together now. Combine bowl #1 and bowl #2.

4Stir in pecans and poppy seeds.

5Beat egg whites into soft peaks. Gently fold into batter.

6Iron time: Pour into a hot, greased waffle iron for about 3 - 4 minutes per side or per your iron instructions.
