This Ham, Peas and Cheddar Scalloped Potatoes is the ultimate comfort food! I remember growing up we used to eat a lot of scalloped potatoes. This is a great way to use up leftover ham.

Yields: 6 - 8 Servings
Ingredients
¼ cup butter
2 cups whole milk or cream
½ teaspoon salt
½ teaspoon ground black pepper
⅛ teaspoon garlic powder
⅛ teaspoon onion powder
2 pounds Yukon gold potatoes, thinly sliced
1 cup cheddar cheese, grated
2 cups cooked ham, diced
1 cup frozen peas
Garnish
green onions or chives, chopped
Directions
1Preheat oven to 400° F. Spray a 2-quart baking dish with cooking spray and set aside.
2In a large pot, melt butter over medium-high heat. Whisk in milk, salt, pepper, garlic powder and onion powder. Add sliced potatoes.
3Bring to a boil, reduce heat to medium-low, and cook (uncovered) for about 15 minutes (or until potatoes are tender). Gently stir the potatoes periodically as they cook.
4Add the ham and peas to the potato mixture.
5Spoon into prepared baking dish. Sprinkle with grated cheese.
6Bake for 30 minutes, or until golden brown. Let stand for 5-10 minutes before serving.
