There are so many things to like about this Green Chili Egg Casserole. You can prepare it the day before ready to bake the next day or you can also bake it and freeze it into individual portions. Oh, and did I mention that it's absolutely delicious?!

Ingredients
12 eggs
½ cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
2 cups cottage cheese, small curd
3 cups Mexicanor cheddar cheese,
6 tablespoons butter, melted
2 (4 ounce) cans mild diced green chilies
2 - 3 green onions, chopped
Directions
1Preheat oven to 350° F. Butter a 9x13-inch baking dish.
2In a large bowl using an electric hand mixer or stand mixer, beat eggs until light.
3Add flour, baking powder, and salt. Mix well.
4Add cottage cheese, Mexican cheese blend, butter, green chilies, and green onions. Mix until combined. Pour into prepared baking dish. Cover and refrigerate overnight or bake right away.
5Bake, uncovered, for 35 - 40 minutes or until edges on top are browned and center is set and appears firm. Cool 5 minutes before cutting and serving.
