One bite of this Creamy Tuscan Gnocchi and you’ll be hooked! Think pillow-soft gnocchi swimming in a silky, garlicky Parmesan cream sauce packed with sun-dried tomatoes and fresh spinach. It’s ultra-savory comfort in a bowl, ready in less than 20 minutes. Trust me, this one goes straight into the weekly rotation!

  • Prep: 5 mins
  • Cook: 15 mins
  • Yields: 4 Servings

Ingredients

2 tablespoons butter

½ onion, finely diced

4 garlic cloves, minced

1 cup chicken broth

1½ cups heavy cream

4 ounces sun-dried tomatoes in oil

salt and pepper, to taste

red pepper flakes, to taste

1 pound gnocchi (shelf-stable or refrigerated)

1 cup fresh baby spinach

4 ounces Parmesan cheese

4 to 5 fresh basil leaves, cut into ribbons

1 teaspoon Italian seasoning

Directions

1Heat a large skillet over medium heat. Add butter and onion and let cook for 6-7 minutes, stirring often. Add garlic and cook for 1 minute longer.

2Add the chicken broth, heavy cream, sun-dried tomatoes, salt, pepper, red pepper flakes, and optional Italian seasonings. Stir together.

3Add in gnocchi and let simmer in sauce for 5 minutes.

4Stir in baby spinach (I suggest tearing into small pieces or chopping) and Parmesan cheese. Stir in fresh basil (reserving some for the garnish).

5When ready to serve, generously top with fresh basil ribbons and sprinkle on extra Parmesan cheese. Serve immediately.
