Creamy Parmesan Skillet Eggs

This recipe for Creamy Parmesan Skillet Eggs is from Chrissy Teigen. Oh, to be her, lounging around the house in silky pjs with John Legend! My friend Alice gave me a stack of cookbooks that someone was throwing away. I have to say, this book is genius. I told my husband to go through a put post-it notes on the recipes he wants me to make, which is practically every page! And yes, he stares at the photos of the lovely Sports Illustrated model. Anyway, back to the recipe. I made several changes - 1) no salt needed, because parm has a lot of salt already, ditto for butter - I used unsalted. 2) I only used one egg. 3) I finished it off under the broiler.

  • Cook: 10 mins
  • Yields: 1 Serving

Ingredients

½ cup finely grated Parmesan cheese

¼ cup heavy cream or half & half

½ teaspoon fresh thyme, chopped

¼ teaspoon freshly ground black pepper

1 tablespoon unsalted butter

1 egg

Directions

1In a small bowl, whisk together the parmesan, cream thyme, and pepper.

2Heat the butter in a 4″ cast-iron skillet over medium-high heat.

3Pour the cream mixture into the skillet until mixture bubbles through, 1 - 2 minutes.

4Crack the egg into the skillet and cook until whites are set and yolks remain running. CT says this takes 2 - 3 minutes, I’d say it takes double that time.

5Season with pepper.

6Serve in skillet.

I think the word creamy is not quite right. It ends up being a crispy parmesan crust. It really is good. Try it and let me know.

I don’t think I really understand this technique. So you’re going to wind up with, what, a kind of caramelized layer of cheesy crunchy cream under the egg?

I guess I’d just need to try it to see what happens!
