Benihana’s Fried Rice

Here is a version of Benihana's Fried Rice.

  • Yields: 4 Servings

Ingredients

1 Tablespoons canola oil

4 ounces boneless, skinless chicken breast, cut into 1-inch chunks

Salt, to taste

Pepper, to taste

2 Tablespoons garlic butter, plus more to taste

3 eggs

1 cup onions, diced

1/4 cup carrots, diced

1/4 cup green onions, thinly sliced

2 cups cooked white rice

2 Tablespoons soy sauce

2 Tablespoons sesame seeds

Benihana's Garlic Butter

1/2 cup unsalted butter

2 Tablespoons Lemon Juice

1 teaspoon Soy Sauce

2 Cloves of Garlic, minced (or 1/4 teaspoon Garlic powder)

Directions

1Add the oil to a skillet and set over medium heat. Meanwhile, season the chicken with salt and pepper. Cook the chicken (stirring occasionally) until lightly-browned, firm, and opaque throughout. Add the garlic butter and stir to coat the chicken. Set aside.

2Using the same pan, cook the onions, carrots and green onions until softened. Set aside.

3Wipe out the pan, then scramble the eggs (season the raw egg with salt and pepper to taste). Add the rice, soy sauce, sesame seeds, chicken, onions, carrots and green onion to the pan and cook until the rice is warm and browned. Serve hot.

Benihana's Garlic Butter

1Blend until smooth.

It is best to use leftover pre-cooked rice when making fried rice.

My family (my PICKY husband included) loved this. I didn’t add the lemon juice to the garlic butter because I didn’t have any on hand. Still tasted great. Will definitely be making this again!

Nikki, don’t melt it. It’s better to leave at room temperature for a while so it softens. By the way, I’m gonna use this recipe and see how I do. But I dont remember carrots, so no carrots fo me!

Decent recipe. The only thing I would change is that I would cook the garlic with the onion, carrot, and scallion just before taking it out of the pan, rather than blending it into the butter. When its in the butter, you can barely taste it.

This flavor is so good my kids LOVE it!!! Hard time getting lemon juice to blend in with butter though. I soften it, should I melt it?
