This Baked Feta and Tomatoes, which is a viral TikTok recipe, get stirred up with roasted spaghetti squash. If you are not into eating carbs, this is for you. It's full of flavor. If you want to add more protein, you could use chicken or shrimp.

Ingredients
1 medium spaghetti squash, (2¾ to 3 pounds)
4 tablespoons olive oil, divided
1 pound cherry tomatoes
4 cloves garlic, thinly sliced
1 small shallot, thinly sliced
red pepper flakes
flaky sea salt
fresh cracked black pepper
7 ounces feta, cut into two slabs
handful of fresh basil
Directions
1Preheat oven to 400° F.
2Halve the squash crosswise, scoop out the seeds, brush with olive oil and season with salt and pepper, then roast cut-side down on a parchment-lined baking sheet for 45 minutes. Let cool for 10 minutes before removing the squash from the skin.
3In a 9-by-13-inch baking dish, combine the tomatoes, garlic and ¼ cup of olive oil. Sprinkle with some salt and toss to coat. Place the feta or goat cheese in the center of the tomatoes, garlic, and shallots and top with the remaining olive oil, and sprinkle the entire dish with red pepper flakes and a little black pepper. Bake for about 40 minutes, until the garlic has softened and the tomatoes have burst their skins. Toss in a handful of basil and stir gently to combine. Toss this with spaghetti squash.
