Creamy Polenta with Sautéed Apples, Mushrooms, & Calvados
This Creamy Polenta with Sautéed Apples, Mushrooms, & Calvados is a warm comforting dish for a chilly night.
Calvados is apple cider that has been distilled into Brandy, which highlights the sautéed apples and mushrooms.
Polenta is made from cornmeal and is gluten-free. However, if you’re making this for someone with Celiac disease, be sure that the polenta you buy is labeled “gluten-free” so that you can be sure there hasn’t been any cross-contamination with wheat.

Chicken Lombardy
This Chicken Lombardy is juice, cheesy and delicious. I think the only difference between Chicken Lombardy and Chicken Marsala is that this dish has cheese. It does call for Marsala wine, though you can use dry sherry.

Tuscan Portobello Stew
This Tuscan Portobello Stew is vegetarian, but you'll be hard-pressed to find anyone, meat-eater or otherwise, who doesn't love it. Did you know the portobello is really a brown crimini mushroom? Once the little crimini grows up to be about 4" - 6" in diameter, it becomes a portobello. The portobello in Northern Italy is called "cappellone" which means "big hat". This stew is wonderfully rich, but only has about 310 calories per serving. I suppose adding the big hunk of crusty bread might take it over the edge! The recipe calls of dried herbs, but I used fresh.

Dutch Baby with Mushrooms, Leeks & Arugula
A Dutch baby pancake, sometimes called a German pancake, a Bismarck, or a Dutch puff, is a large American popover and is similar to a large Yorkshire pudding. I love making them because they have minimal ingredients and you can either make them sweet or savory. This Dutch Baby with Mushrooms, Leeks & Arugula is a great combination and makes an easy weeknight meal.

Sweet Potato Gnocchi with Mushrooms and Pancetta
One of my favorite things is concocting recipes from ingredients I find at Trader Joe's. After cooking all day, every day, I'm usually out of ideas and energy to make dinner. This Sweet Potato Gnocchi with Mushrooms and Pancetta is all of three ingredients and absolutely a winning combination.

Balsamic Rosemary Beef Steak Tips and Mushrooms
Steak tips are actually Flap meat, which is a thin cut of meat that comes from the bottom sirloin butt, similar to flank, hangar or skirt steak. The marinade for these Balsamic Rosemary Beef Steak Tips and Mushrooms is a wonderful combination of balsamic vinegar, soy sauce, rosemary, garlic and a touch of sugar, which helps tenderize the meat.
