Benihana’s Fried Rice

If you can’t stand the heat, then step away from this 500-degree griddle! My friend Dave received a Be the Chef program gift certificate at Benihana’s from his family.  It always looks so easy to be a teppanyaki chef. Trust me, it’s very difficult and VERY hot! Dave did an amazing job at keeping everything […]

Butternut Squash Risotto

My brother-in-law, Russell, made this Butternut Squash Risotto for some vegetarian guests. He replaced the chicken stock with vegetable stock. The rice can be partially cooked in advance and cooled, the finishing process is so precise that the risotto cannot wait for your guests, but rather your guests have to wait for the risotto. Arroz Verde (Green Rice)

My new friend, Pat, made this fantastic dinner for us over the summer. One of the things she made was green rice. There are many versions of this delicious Mexican side dish. Unfortunately, I did not take a picture of the final product! I guess I was too busy eating it! [amd-zlrecipe-recipe:195]

Asparagus Lemon Risotto Serves 4 Risotto is a great base for all kinds of vegetables. It’s done when it has a loose consistency and ripples when spooned into a bowl. 6 cups […]

Wild Rice & Chicken Casserole

I used to make this casserole when we were first married for dinner parties.  It was “cheap and cheerful” as we would say.  Personally, I prefer to use a wild rice blend when making this dish, which does make it cheaper! Wild rice (also called Canada rice, Indian rice, and water oats) is four species […]

Shrimp Fried Rice

For my toddlers When my kids were toddlers (though they still act like toddlers!), I used to make them fried rice for dinner.  I thought it was a great way to get them to eat eggs.  I haven’t made it in a long time and my daughter, Grace, requested it for her birthday dinner. Shrimp […]
