Scrambled Eggs, Gruyère Cheese, and Rosemary on English Muffins

I left for work and my daughter Zoe made herself breakfast! Next time, make it before I leave! Scrambled Eggs, Gruyère Cheese, and Rosemary on English Muffins looks really good. I love anything on English Muffins.

Ingredients

2 tablespoons butter

6 large eggs, lightly beaten

1 cup gruyere cheese, shredded

kosher salt & freshly ground black pepper, to taste

4 split English muffins, toasted

1 tablespoon fresh rosemary, chopped

Directions

1In a nonstick skillet, heat the butter and then add the eggs and scramble, scraping down the side with a rubber spatula until just set, about 2 minutes. Add the Gruyere and stir until just melted. Season lightly with salt and pepper.

2Arrange the toasted English muffins on plates. Spoon the scrambled eggs on the muffins and top with rosemary and serve!
