White Beans and Sausage with Sage

This recipe for White Beans and Sausage with Sage is adapted from The Silver Spoon, which is a cookbook that was first published in 1950 and revised over time, Italy's bestselling culinary "bible", and has been translated into English. The book has over 2,000 recipes and I consider it the "Joy of Cooking" for Italian cooking.

  • Yields: 4 Servings

Ingredients

2 teaspoons olive oil

4 sweet Italian pork sausages

1 celery stalk, cut into chunks

2 whole garlic cloves, crushed

½ white wine

2 fresh sage leaves

2 (15-ounce) cans cannellini beans, rinsed and drained

Kosher salt and black pepper, to taste

Directions

1Heat the olive oil in a medium sauté pan. Add sausage, celery, garlic and 1 sage leaf to the pan. Brown the sausages, then add the white wine and cook until evaporated. Then add the beans the other sage leaf torn into pieces. Cover and cook over medium heat for 30 minutes. Season with salt and pepper.

I added carrots and zucchini, since I don’t have celery in the house and I want to make a one skillet meal. I cannot wait to try it!
