Tequilaberry’s Salad

This Tequilaberry’s Salad recipe is from Tequilaberry’s restaurant that has been closed for many years that was located in Coon Rapids Minnesota. It was one of the most popular items on their menu.

  • Prep: 15 mins
  • Yields: 15 - 20 Servings

Ingredients

2 heads lettuce, chopped (or 2 1-pound bags pre-cut lettuce)

1 head cauliflower, cut up into tiny pieces

1 pound bacon, fried and crumbled

1 cup mayonnaise (no substitutions)

2½ tablespoons white vinegar

¼ cup sugar

1 -1½ cup parmesan cheese

Directions

1Combine lettuce, cauliflower, and bacon.

2Mix mayonnaise, vinegar, and sugar.

3Add dressing to salad, add parmesan cheese. Serve immediately.

Note:
This salad does not keep well overnight once the dressing and salad are mixed. If you know you’re going to have leftovers, keep the dressing and salad separate and allow guests to serve themselves.
