I love being able to use some oranges from our tree. This Tarragon Mayonnaise with Orange Zest makes a great dipping sauce for artichokes and other vegetables. It's perfect to serve at a springtime luncheon.

Yields: Makes about ½ cup
Ingredients
⅓ cup or more tarragon leaves, finely chopped
Leaves from several sprigs parsley, finely chopped
½ cup mayonnaise
1 tablespoon olive oil
grated zest of 1 small orange
fresh ground white pepper and sea salt, to taste
Directions
1Stir the tarragon and parsley into the mayonnaise. Add the orange zest, season with pepper and salt, and stir well.
