I was at CVS pharmacy with my husband and he picked up Cleaning Eating Magazine and opened to Taco-stuffed Avocado Boats. So, I decided that is what’s for dinner. It was really good. They are made by halving avocados, removing the pits and a little bit of the avocado, then filling them with a mixture of taco meat (I used ground Turkey), cheese, and your favorite taco toppings. You purée the scooped-out avocado with some sour cream and lime juice. Avocados are a good source of healthy fats, fiber, and vitamins.

Ingredients
4 large avocados, halved and pitted (peel on)
½ cup full-fat sour cream
1 tablespoon fresh lime juice
¾ teaspoon sea salt, divided
1 tablespoon extra-virgin olive oil
½ cup red bell pepper, diced
¼ cup white onion, diced
½ pound lean ground beef or ground turkey
¼ cup prepared salsa
2 teaspoons ground cumin
1 teaspoon chile powder
½ cup shredded cheddar cheese
¼ cup cilantro, chopped
Directions
1Scoop out 2 to 3 tablespoons flesh from the bottom of each avocado half, leaving the remaining flesh in avocado intact. Add removed flesh to a food processor along with sour cream, lime juice and ¼ teaspoon salt. Purée until smooth and set aside.
2In a medium skillet on medium, heat oil. Add bell pepper and onion and sauté for 3 minutes. Add beef and cook for 8 minutes, breaking up meat with a spoon. Add salsa, cumin, chile powder, and remaining ½ teaspoon salt. Cook for another 3 minutes or until cooked through. Stir in cheese.
3Divide filling between avocado halves; drizzle with avocado-sour cream mixture. Top with cilantro.
