Spicy Sausage Ragout

When we lived in London, I used to love food shopping at Sainsbury’s. They had these wonderfully simple adverts on the telly (sorry, I had to do that), showing you how to make a quick and easy meal. It always started out by saying “Simply take….” Anyway they would have these cards in market. I would collect them and make all the recipes. Here is one I found in my collection. I love how the recipe is called Spicy when there is nothing spicy in it!

  • Yields: 4 Servings

Ingredients

1 pound sausages

1 tablespoon olive oil

1 onion, sliced

1 red pepper, thinly sliced

1 yellow pepper, thinly sliced

2 cloves garlic, crushed

2 teaspoons fennel seeds

2 teaspoons paprika

14.5 ounce can diced tomatoes

1 cup Chicken stock

1 tablespoon fresh oregano

1 teaspoon dark brown sugar

Salt and pepper, to taste

1 pound Fusilli pasta

Freshly grated Parmesan cheese to garnish

Directions

1Heat the oil in a frying pan and add the sausages and sauté until evenly browned.  Remove the sausages from the pan and set aside.  Add the onions and sauté until softened.  Then add the peppers and sauté for 3-4 minutes.

2Stir in the remaining ingredients and season to taste.  Bring to a boil, reduce heat and simmer uncovered for 15 minutes, stirring occasionally until the sauce is reduced and thickened.

3Slice each sausage into bite size pieces, add to the sauce and simmer it for an additional 10 minutes.

4Meanwhile, cook the pasta according to instructions.  Serve the Ragout over the pasta.  Garnish it with fresh oregano and Parmesan cheese.
