Smashed Parmesan Roasted Broccoli

Smashed Parmesan Roasted Broccoli is easy and delicious. The broccoli is first steamed until tender, and tossed with olive oil, lemon zest, garlic powder, salt, and pepper. It's then smashed on a sheet pan with the bottom of a glass and topped with parmesan cheese. Smashing the broccoli, it creates a flatter surface for the cheese to adhere to, and it also helps to release some of the broccoli's natural sugars, which caramelize in the oven and give the broccoli a crunchy texture.

Ingredients

1 large broccoli, chopped into florets

2 tablespoons olive oil


zest of 1 lemon


1 teaspoon garlic powder

salt & freshly ground black pepper, to taste

½ cup freshly shredded parmesan cheese


Directions

1Preheat oven to 425° F.



2Steam the broccoli for 2-3 minutes, or until just tender. Allow the broccoli to cool slightly. Then pat them dry with a tea towel.

3Combine the broccoli with the lemon zest, garlic powder, olive oil and a generous pinch of salt and black pepper in a mixing bowl, then pour out onto a baking tray.



4Use a glass, or anything with a flat bottom, to smash down each floret. Sprinkle the broccoli with the parmesan cheese and roast for 15 - 20 minutes.
