Sherried Tomatoes

These Sherried Tomatoes are delicious and make a great side dish to your meal. There is a subtle touch of fresh dill and they can be made 1 hour ahead and then are put under the broiler for a few minutes until the cheese melts and is bubbly and golden.

Ingredients

Fresh tomatoes

For each tomato

1 tablespoon sherry

⅛ teaspoon dill weed

⅛ teaspoon black pepper

1 tablespoon mayonnaise

1 tablespoon Cheddar cheese, finely grated

Directions

1Remove the core from each tomato and slice tomato in half. Place cut side up on a cookie sheet. Pierce each tomato several times with a fork. Sprinkle each half with sherry, dill weed and pepper. Broil for 2 - 3 minutes. (May be prepared to this point 1 hour before serving.)

2Top each half with the mixture of mayonnaise and cheese. Broil for 2 - 3 minutes or until bubbly and slightly browned. Serve immediately.
