I bought this rainbow cauliflower Trader Joe's and decided to roast it. I tossed it in olive oil, lemon, garlic, red pepper flakes and I finished it with chopped walnuts and some parmesan cheese. I love the colorful mix of purple, green, white, orange cauliflower florets.

Ingredients
1 large cauliflower (purple, orange or white), cut into florets
¼ cup olive oil
¾ teaspoon red chili flakes
2 cloves garlic, minced
1½ teaspoon lemon zest
Juice of half a lemon juice
salt and pepper, to taste
¼ cup walnuts, roughly chopped
¼ cup parmesan cheese
Directions
1Preheat the oven at 425° F.
2In a bowl, combine olive oil, pepper flakes, garlic, lemon zest, juice, and salt and pepper.
3Place the cut cauliflower florets on a baking sheet in a single layer and drizzle the dressing.
4Bake it in the oven for 15 minutes. Then flip the florets and add the walnuts and put it back in the oven and roast for another 10 minutes.
