Pulled BBQ Chicken Sandwiches

These Pulled BBQ Chicken Sandwiches were a HUGE hit at the school I cook for. You make them in a slow cooker then shred them up and add bbq sauce. I actually made mine in my Instant Pot because I did not have a lot of time. This sandwich is a real crowd-pleaser.

  • Yields: 4 - 6 Servings

Ingredients

1 - 2 pounds

boneless skinless chicken breast

18-ounce bottle of your favorite barbecue sauce (I use Sweet Baby Ray’s)

1 medium sweet onion, sliced

4 - 6 hamburger buns

Directions

1Remove all visible fat from the chicken and toss it in the slow cooker.

2Place the onion slices on top of the chicken.

3Pour the barbecue sauce over top.

4You may not need the entire bottle, just enough to cover the chicken.

5Cook it on LOW for 8 hours or until the chicken is nice and tender.

6Shred the chicken with a fork and knife; scoop the mixture onto the bottom buns and top it with the top buns.
