Pickled Harissa Corn Relish

Make this Pickled Harissa Corn Relish while corn is in peak season. It's great served over cumin-rubbed grilled ribeyes, shredded pork or burgers.

  • Yields: Makes 2 Cups

Ingredients

½ cup cider vinegar


½ cup water


1 tablespoon harissa paste


2 - 3 teaspoons sugar


1½ teaspoons salt


1½ cups fresh sweet corn kernels (cut from 3 ears fresh sweet corn)


½ cup sweet onion, chopped


½ cup red sweet pepper, chopped


¼ cup carrot, sliced


¼ cup radishes, thinly sliced


1 tablespoon fresh cilantro, chopped

Directions

1In a saucepan combine cider vinegar, water, harissa paste, sugar, and salt. Bring to boiling, stirring to dissolve sugar. Remove from heat; stir in corn kernels, onion, red sweet pepper, carrot, and radishes. Cool completely. Chill 24 hours. Stir in fresh cilantro before serving.

Steak

1Serve over cumin-rubbed grilled ribeyes.

Pork

1Top shredded pork tenderloin and lettuce in a tortilla.

Burgers

1Use as a topper for beef or turkey burgers.
