Pasta with Broccoli Sauce

My daughter Grace makes incredible homemade pasta. I had a bunch of broccoli on hand and she made this Pasta with Broccoli Sauce. You don't necessarily have to make homemade, but if you have the time, it's worth the effort. The Broccoli sauce is sublime.

Ingredients

⅓ cup olive oil

1 onion, diced

4 cloves garlic, minced

broccoli florets from 1 large head of broccoli

¼ cup water

½ cup parmesan cheese

juice of 1 lemon

red chili flakes, to taste

sea salt & pepper

8 - 12 ounces fettuccine or fresh homemade pasta

Directions

1Fill a large pot with well-salted water and bring to a boil to cook the pasta. Cook according to package directions.

2Add a tablespoon or two of olive oil to a large skillet heat to medium and sauté the diced onions and garlic for a minute or two.


3Add the broccoli florets to the pan along with a ¼ cup of water then cover and steam for about 5 minutes or until the broccoli is fork-tender.

4Using a potato masher or a fork mash the broccoli down into a sauce-like paste.

5Add the lemon juice, red chili peppers and season with salt and pepper.

6Add parmesan cheese to the sauce and mix through just before serving.

7Mix pasta with the sauce and serve garnished with parmesan cheese and lemon zest.
