Lemon Za'atar Spinach & Artichoke Dip is so light and refreshing and perfect for summer entertaining. You can serve this dip warm, room temperature, or cold with pita chips, crackers or bread. I opted for cold!

Ingredients
⅛ cup olive oil
1 large shallot, finely chopped (about ⅓ cup)
6 cloves garlic, finely minced
10 oz fresh spinach, chopped
1 (10 ounce) jar artichoke hearts, drained chopped
1⅓ cup Greek yogurt
½ cup grated Parmesan
Zest of 1 lemon
Juice of 1 lemon
2 tablespoons za’atar
Salt & pepper
Directions
1Heat up a large skillet on medium-low heat. Add the oil, shallots and season with salt and pepper. Sauté for 3-4 minutes until shallots have begun to soften. Add the garlic and cook for about a minute until the garlic is fragrant. Add the spinach, and sauté for 7-8 minutes until the spinach has fully cooked down. Mix in the artichoke hearts and remove from heat. If you want to eat the dip cold, let the veggie mixture cool. Otherwise, proceed directly on to the next step.
2Add the spinach and artichoke mixture to a large bowl along with the Greek yogurt, Parmesan cheese, lemon zest, lemon juice, za’atar, and a pinch of salt. Mix together, and serve warm, room temp, or chilled.
