I made these Japanese Potatoes with Soy Sauce and my daughter raved about them. I was meant to buy regular mini potatoes, but I could only find fingerlings. The potatoes are simmered in soy sauce, sugar, salt and water. It's so simple and really delcious.

Ingredients
1 pound fingerling or small potatoes
3 tablespoons soy sauce
1 tablespoon sugar
¼ teaspoon salt
⅔ cup water
1 green onion, sliced
Directions
1Add all ingredients to a saucepan except for the potatoes, and stir well.
2Add potatoes and bring to a boil.
3Lower the heat to medium-high and cook for 10 minutes, turning potatoes occasionally.
4Lower the heat to medium and cook for another 5-10 minutes. The sauce will start to caramelize.
5Move the potatoes around now and then to coat them with the thickened sauce.
6Once the potatoes are done, turn off the heat and transfer them to a bowl. Garnish with green onions.
