This Italian Macaroni Bake is super easy to make a the ultimate in comfort food. I usually make Green Chili Macaroni and Cheese, but this Italian version is delicious!

Ingredients
1 onion, chopped
1 clove garlic, minced
1 teaspoon olive oil
2 cups elbow macaroni
16 ounce can Italian stewed tomatoes
8 ounces mozzarella cheese, shredded
½ cup mayonnaise
1 teaspoon italian seasoning
Directions
1Preheat oven to 350°F.
2Sauté the onion and garlic in 1 tsp olive oil, until soft.
3Cook macaroni in boiling water for 6 minutes. Drain.
4In a large mixing bowl combine the sautéd onion and garlic, cooked macaroni, stewed tomatoes, ¾ of the mozzarella, italian seasoning and mayonnaise .
5Spoon the mixture into a 1½ quart casserole dish. Sprinkle with the remaining mozzarella cheese.
6Bake in the preheated 350°F oven for approximately 20 min, until warm and all cheese is melted.
