Need a big breakfast for visiting family? Here is your answer! Huevos con Papas Rancheros Casserole. Yes, tater tots are involved! You could also add a 4 ounce can of diced green chilis to the eggs.

Huevos con Papas Rancheros Casserole

Ingredients

Nonstick cooking spray

32 oz package frozen fried potato nuggets

12 eggs

1 cup milk

1 1/2 tsp dried oregano, crushed

1 1/2 tsp ground cumin

1/2 tsp chili powder

1/4 tsp garlic powder

8 oz Mexican cheese blend, shredded

16 oz jar thick and chunky salsa

8 oz sour cream

fresh cilantro

Directions

1Preheat oven to 375 degrees F. Lightly coat a 3-quart rectangular baking dish with nonstick cooking spray. Arrange potato nuggets in dish.

2In a large mixing bowl combine eggs, milk, oregano, cumin, chili powder, and garlic powder. Beat with a rotary beater or wire whisk until combined. Pour egg mixture over potato nuggets.

3Bake for 35 to 40 minutes or until a knife inserted near center comes out clean. Sprinkle cheese evenly over egg mixture. Bake about 3 minutes more or until cheese melts. Let stand for 10 minutes before serving. Top with salsa, sour cream, and cilantro.

Who doesn’t love a tater tot, maybe I am just hungry but this looks so carby and eggy and yummy!
