8 ounces reduced-fat cream cheese, at room temperature
½ cup mayonnaise or low-fat sour cream
2 tablespoons fresh lemon juice

6½ ounce jar pimientos or roasted red peppers, finely chopped
6 ounces sharp orange cheddar, grated
6 ounces pepper jack cheese, grated
2 scallions, thinly sliced
Potato chips, pita chips, or crudité, for serving

1Heat oven to 425° F. In a large bowl, whisk together the cream cheese, sour cream, lemon juice, and ¼ teaspoon each salt and pepper. Fold in the pimientos, Cheddar, Jack cheese, and scallions.
