I have always liked anything that is spicy and sweet. This Hot Honey Salmon is the perfect combination. Dinner is ready in under 20 minutes, it can’t get any easier than this!

  • Prep: 5 mins
  • Cook: 10 mins
  • Yields: 4 Servings

Ingredients

¼ cup hot honey - see below

2 tablespoons lemon juice

1 tablespoon freshly grated lemon zest

1 tablespoon olive oil

crushed red pepper flakes, to taste

½ teaspoon salt

4 salmon fillets

Hot Honey

2 - 4 hot chiles (such as Fresno, Holland, or Thai), thinly sliced

1 cup honey

Directions

1In a small bowl, combine the first 6 ingredients. Pour ¼ cup marinade into a large resealable plastic bag. Add the salmon; seal bag and turn to coat. Refrigerate for up to 30 minutes. Cover and refrigerate remaining marinade.

2Drain salmon, discarding marinade in bag. Place salmon skin-side down on a greased grill rack. Grill, covered, over high heat or broil 3 - 4 inches from the heat for 5 - 10 minutes or until fish flakes easily with a fork, basting occasionally with remaining marinade.

Hot Honey

1Bring 2 chiles and honey to a bare simmer in a small saucepan over medium-low heat. Reduce heat to low and let cook 20 - 30 minutes to infuse. Taste honey and adjust heat with another chile or 2, remove from stove, and let sit 30 minutes. Transfer to a small jar, straining if desired. Cover and chill.

Love it already! Since we eat it once a week, always looking for another way to fix salmon.

Thanks, Leslie…..
