Hot Black-Eyed Pea Dip

For good luck and prosperity in the New Year, I always try to include Black-Eyed Peas in my celebrations. We could all use a little extra good fortune, right? This warm and cheesy Black-Eyed Pea Dip is a perfect party appetizer or snack, served with tortilla chips. It's loaded with cream cheese, sour cream, cheddar cheese, and a can of Rotel diced tomatoes and jalapeños for a spicy kick.

- Yields: 6 Servings
Directions
1Preheat oven to 350° F.
2Melt butter in a pan and add onion. Cook until soft.
3Add remaining ingredients to pan EXCEPT shredded cheese. Stir to evenly mix and remove from heat. Check for seasoning and add salt and pepper to taste.
4Transfer dip to a greased cast iron skillet or baking dish. Sprinkle shredded cheese on top.
5Place in oven and bake for 20 minutes or until warm and cheese is melted.
6Serve with tortilla chips.
