Honey Dijon Roasted Chicken with Potatoes and Broccoli

This Honey Dijon Roasted Chicken with Potatoes and Broccoli is a great way to make a chicken. It's very versatile because you can put any vegetables you like on the bottom which cook in the juices of the chicken.

Ingredients

1 pound potato, cut into chunks

1 pound broccoli, cut

1 whole chicken

2 tablespoons olive oil

2 tablespoons honey

2 tablespoons Dijon mustard

1 teaspoon rosemary

6 cloves garlic, minced

salt and pepper

Directions

1Toss potatoes and broccoli with oil, salt and pepper in a roasting pan.

2Mix olive oil, honey, Dijon, rosemary, garlic, salt and pepper in a small bowl.

3Place the chicken on top of the potatoes and broccoli. Baste it with some of the marinade.

4Bake covered in foil at 375° F for 1 hour.

5Remove pan from oven and baste the chicken again with more marinade.

6Bake additional 30 minutes, uncovered until chicken is cooked and veggies are tender.
