Grilled Cheesy Sausage Bread with Chimichurri

When you fire up your grill, you need to make this Grilled Cheesy Sausage Bread with Chimichurri. It’s delicious. You take a baguette, slice it down the middle lengthwise, hollow out some of the bread, and line it with cheese (I tried it with sliced brie on one side and mozzarella on the other, but you can use whatever kind you like), then cover it with Italian sausage. Grill it upside down to cook the sausage through. Serve with Chimichurri sauce and watch your guests go wild.

Ingredients

1 fresh baguette loaf

shredded mozzarella cheese, sliced brie, provolone, your choice of cheese

1 pound ground sausage

Chimichurri Sauce

2 cups packed parsley leaves and tender stems

3 to 4 garlic cloves, minced

1 medium shallot, minced

½ to ¾ teaspoon fine sea salt

½ to 1 teaspoon crushed red pepper flakes or 1 jalapeño or Fresno chili pepper, finely chopped, see tips

½ cup extra-virgin olive oil

⅓ cup red wine vinegar

Directions

1Slice baguette lengthwise into two open face halves, then hollow out center.

2Next top with cheese then finish it off by covering both sides with the ground sausage, pressing to seal each baguette piece so the filling doesn’t fall out.

3Grill, sausage-side down, over medium heat about 15 minutes, or until cooked through (internal temp of sausage should reach 165° F)

4Slice sausage bread into 2-inch pieces and serve with Chimichurri sauce.

Chimichurri Sauce

1Pulse all ingredients in a food processor or blender, but avoid over-processing for the best texture. Finally, taste and adjust the seasonings to your liking.
