Julia Child’s Grated Zucchini Sautéed in Butter and Shallots

I made Julia Child's Grated Zucchini Sautéed in Butter and Shallots, which is so simple, it’s barely a recipe. Cooking doesn’t have to be complicated to be good. It only takes 5 minutes to sauté. This recipe really highlights the flavor of zucchini. It’s right around now that people have a plethora of zucchini in the garden, so you’re welcome!

Ingredients

2 pounds zucchini

2 tablespoons butter

1 tablespoon olive oil

3 tablespoons shallots or scallions, minced

salt and pepper

Directions

1Grate the zucchini. Transfer the zucchini to colander. Toss with ½ teaspoon of salt. Leave for 2-3 minutes. Squeeze zucchini in a clean dish towel to draw out the excess liquid. You may have to do this in batches.

2Heat oil over medium-high heat in a large skillet until hot. Add shallots and cook, stirring, for 30 seconds. Add zucchini. Cook, tossing often, for 3-5 minutes, until zucchini is just tender. Season with pepper.

1Freshly grated parmesan cheese

2Fresh herbs of your choice
