Grace’s Gnocchi Carbonara

Grace's Gnocchi Carbonara made by my daughter Grace is fantastic. It is a wonderful twist on a classic dish. Why didn't I think of that!? Talk about comfort food!

Grace's Gnocchi Carbonara

Ingredients

1 package gnocchi

6 strips bacon

2 Tablespoons olive oil

2 Tablespoons butter

4 cloves garlic, minced

1/2 cup heavy cream

1/2 teaspoon salt

2 eggs, beaten

1/2 cup Parmesan cheese, shredded

1/4 teaspoon nutmeg (freshly grated preferred)

Salt & pepper to taste

Directions

1Slice the bacon into thin strips.

2Heat a skillet to medium high and add the bacon. Cook until crisp. Turn off heat and move bacon to a paper towel lined plate leaving a little bit of the bacon grease in the skillet. Add the butter and oil and heat over medium high until butter is melted.

3Add the garlic and cook for 1 minute. Add the heavy cream, eggs and 1/2 teaspoon salt and bring to a simmer. Cook until sauce is reduced by about a third. Stir in nutmeg.

4Cook the gnocchi to package or other directions. With a slotted spoon, move gnocchi to a serving bowl. Top with sauce, Parmesan cheese and salt and pepper to taste.

I just love gnocchi. I’ve always made it with a red sauce or sometimes pesto. This looks really good. I’m a vegetarian so I’ll swap out the bacon for toasted pecans maybe. I’d love other suggestions for bacon substitution.

More importantly, those of us in the rest of the country, who think of the people we’ve followed online for years as friends, are thinking about you every minute of the day. I know I’m donating to the animal shelters down there. I wish we could all come like a swarm of locusts and rebuild the area.
